Korean Gochujang Salmon w/ Salad (고추장 연어 샐러드)

When we feel like eating something healthy and light, we like to eat a simple salad with a protein. Usually our salad base is pretty much the same, but I like to mix up our protein and the sauces used. This is an oven baked salmon recipe with a Korean-inspired gochujang (Korean chili paste) sauce. Sweet and spicy! It goes well with salad as well as rice!


Ingredients (2 servings)

Salad mix for 2 servings *

2 salmon fillets

A pinch of salt & pepper

Gochujang Sauce:

2 tablespoons of Gochujang (Korean chili paste)

1 tablespoons of soy sauce

1 tablespoon of sugar

1 teaspoon of sesame

1 teaspoon of sesame oil

1 teaspoon of mirin or cooking wine

* I used mixed greens, cherry tomatoes, roasted broccoli, and button mushrooms. For dressing, I used 1 tablespoon of extra virgin olive oil, salt, and pepper. Feel free to mix it up to your liking!


Instructions

  1. Preheat your oven to 180°C (~350°F).

  2. Add a pinch of salt & pepper to your salmon fillets.

  3. Top off your salmon fillets with your Gochujang sauce.

  4. Bake salmon fillets in the oven for 20-30minutes depending on the size and thickness of your fillets.

  5. Prepare your salad mix while your salmon fillets are baking in the oven.

  6. Add the salmon fillets to your salad mix.

  7. Serve and Enjoy!
